Casey Ostwinch and wife Tori Ostwinch are relatively new to market gardening, but have already set up an impressive 3/4 acre small farm in North Carolina. One of the methods he’s implemented is the intensive use of cover crops to build soil on a small scale. We talk about that, about using tools and choosing cover crops to take advantage of your climate, and how to be agile with cover crops when circumstances change, like… say… a pandemic hits and the restaurants you sell to are closed.
